Note well: Some of the seasonings in Leggio's Gourmet Olive Oil will sink to the bottom of the bottle. It is necessary to shake the bottle vigorously to release the seasonings. This is a normal occurance.

Simple and Easy Shrimp Scampi

  • 10-15 Large Shrimp
  • One Lemon

Preparation Time: 5 minutes

Peel and wash the shrimp, or purchase already-peeled shrimp. Without shaking the bottle, pour some Leggio's Gourmet Olive Oil into a pan. Add the shrimp and, under medium-high heat, sautee the shrimp for one minute per side. Now, shake the bottle vigorously and add Leggio's Gourmet Olive Oil, and the juice of half the lemon, to the shrimp, and sautee for a further minute. Serve and enjoy!

Grilled Swordfish

Marinading Time: 1-2 hours

Preparation Time: 15 minutes

Marinate the swordfish in Leggio's Gourmet Olive Oil and lemon juice for one to two hours. Place on hot grill for 3-4 minutes per side. Garnish with lemon wedges. Goes great with steamed broccoli!

Grilled Tuscan-Style Bruschetta

  • One loaf of Italian Bread
  • Two large, ripe tomatoes
  • 1/4 cup Leggio's Gourmet Olive Oil
  • Balsamic vinegar to taste
  • Fresh Basil leaves
  • 1/2 onion, chopped fine
  • 1 Tablespoon of sugar

Preparation Time: 15 minutes

Slice the Italian Bread 1/2 to 3/4 of an inch thick and drizzle Leggio's Gourmet Olive Oil over the slices. Place on hot grill until toasted. Chop tomatoes into small cubes. Combine balsamic vinegar, tomatoes, sugar, and the remaining Leggio's Gourmet Olive Oil in a bowl and mix gently. Add the basil leaves and spoon the mixture over the hot bread. Serve warm or cold.

Alternately, prepare the bread as directed, then top with goat cheese and bake at 350 degrees until the cheese begins to bubble. Serve hot.

Pasta Primavera

  • Mixed chopped vegetables: broccoli, asparagus, carrots, mushrooms, and onions
  • One pound of your favorite pasta
  • One chopped medium tomato

Preparation Time: 25 minutes

Sautee vegetables in Leggio's Gourmet Olive Oil until softened but still al dente. Add fresh chopped tomatoes. Add cooked pasta to the vegetable mixture. Serve with grated parmesan cheese.

Baked Chicken

  • 1/4 cup of either white balsamic or red wine vinegar.
  • 1/2 cup of Leggio's Gourmet Olive Oil
  • 2 cups of unseasoned breadcrumbs
  • Chicken Pieces or Breast

Preparation Time: 40 minutes

In a medium size bowl, combine oil and vinegar. Drench chicken in oil and vinegar combination. Lightly coat pan in any type of oil. Coat chicken in breadcrumbs and place in casserole dish or baking pan. Bake for 20-30 minutes at 350 degrees.

Clams Oreganata

  • 2 cups of unseasoned breadcrumbs
  • 1/4 cup of Leggio's Gourmet Olive Oil
  • 1/4 cup of either white balsamic or red wine vinegar.
  • One Lemon
  • Cherry stone or Little Neck clams

Preparation Time: 30 minutes

Combine breadcrumbs in bowl with oil. Open the clams with a clam knife. Top the clams with the breadcrumb mixture. Place in shallow pan. Squeeze lemon lightly over clams and bake at 350 degrees for 10-15 minutes.

Snapper Marechiara

  • Snapper Filet
  • 1/2 cup vegetable broth or stock
  • 1/3 cup white wine
  • Chopped Basil
  • Canned plum tomatoes

Preparation Time: 30 minutes

Lightly flour snapper on each side. Pour Leggio's Gourmet Olive Oil into hot frying pan. Place snapper in pan and brown on both sides. Add wine and allow alcohol to cook out for a minute. Add plum tomatoes, basil, and then the stock. Allow sauce to simmer for 5 minutes and then serve.

Quick and Perfect Marinara Sauce

  • One can of plum tomatoes
  • 10 fresh basil leaves

Preparation Time: 20 minutes

Pour Leggio's Gourmet Olive Oil into saucepan and allow to cook for not even one minute. Add tomatoes and basil leaves. Let simmer for 15 minutes, stirring occasionally.
